Chocolate Chip Pie (Peppermint Pie)

Heat in double boiler:

  • 1 cup milk
  • 5 1/4 cups mini marshmellows (10 ounces)

Heat until melted, stirring often, don’t ignore.  Let cool.
Add

  • 3 squares of grated bitter chocolate
  • or, 6 ounces chocolate chips
  • or, 5 ounces grated Hersheys almond bar
  • or, about 6 candy canes crushed

Add

  • 1 cup whipping cream, whipped
  • or, 1 large cool whip container

Pour in graham cracker crust.    Chill.    Sprinkle with a little chocolate or whatever you filled with.

Make Ahead Breakfast Cake

  • 1 1/4 cups flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • pinch of salt
  • 1/4 cup margarine
  • 2/3 cup milk
  • 1 egg

Sift dry ingredients.  Cut in margarine.  Add milk and egg.  Pour into a 8″ square pan or round pan (can be doubled for a larger pan).  Sprinkle with topping.  Cover with plastic wrap and refrigerate over night.  Remove plastic wrap and bake at 400 degrees for 25 minutes.

Topping:

  • 4 tablespoons flour
  • 3 tablespoons margarine
  • 6 tablespoons sugar
  • 1/2 teaspoon cinnamon

Grandma Morgenegg’s Santa Head Sugar Cookies

Sift:

  • 4 cups flour
  • 3/4 teaspoons salt
  • 1 teaspoon baking soda

Cream:

  • 1 ½ cups sugar
  • 1 cup margarine
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond or lemon extract
  • 3 medium eggs

Add sifted dry ingredients to creamed mixture.  Roll out 1/8 “ thick.  Cut with molded cookie cutters or other cutters.    Bake at 350 degrees for 10 minutes.  Don’t let get too brown.  Cool and frost with butter cream frosting.

Oatmeal Cake

Pour

  • 1 1/4 cups boiling water over
  • 1 cup uncooked oatmeal.

Let stand, covered for 20 minutes.
Cream

  • ½ cup soft margarine.

Add:

  • 1 cup sugar
  • 1 cup brown sugar

Beat until fluffy.
Add:

  • 1 teaspoon vanilla
  • 2 eggs.

Add oats mixture, mix well.
Sift and add:

  • 1 ½ cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Bake in 9×13″ greased pan at 350 degrees for 45-55 minutes.
Top with:

  • ½ cup melted margarine
  • 1 cup brown sugar
  • 6 tablespoons milk
  • 1/2 cup chopped nuts
  • 1 1/2 cups coconut

Spread on cake, Broil 2 minutes to bubble. Watch carefully to not burn.

Grandma Vowles Potato Rolls

  • 1 cup potato water
  • 2 ½ teaspoons salt
  • 1 cup mashed potatoes
  • 1/4 cup sugar
  • 1 cup milk
  • 2 eggs
  • 2/3 cup margarine
  • 6 cups flour
  • 1 tablespoon yeast

Boil 1 medium potato in 1 ½ cups water with ½ teaspoon salt, when tender, drain, save water.  Mash potato.  Measure 1 cup potato water in pan, add mashed potato, margarine.  Warm till margarine is melted.  Add milk.  Pour warm liquids over salt, sugar in mixing bowl. When luke warm add yeast, mix well.  Add beaten eggs.  Then gradually add flour.  Mix and knead to a smooth soft dough.  Put in greased bowl, turn to grease top.  Let rise til double in bulk.  Roll out on floured board to about ½ inch thick, cut with round 3″ cutter (or lid).  Brush with melted margarine, fold in half, butter tops. Place close in greased pan.  Bake in hot oven (400 degrees) until golden brown.
400 degrees, 15 to 25 minutes.

Smothered Chicken

3 large chicken breasts, boned and skinned and cut in half
Simmer chicken until tender but not mushy, about 1/2 hour.  Dip in beaten egg, then fine bread crumbs.  Brown in shortening until golden brown.  Place in greased baking dish.  Heat 1 cup chicken broth (reserved from simmering chicken) and 1 cup milk.
Bake about 30 minutes at 350 degrees.  Make noodles and cook in remaining broth (you can add water if needed.  Serve noodles with chicken.

Grandma Morgenegg’s Sage Dressing (Stuffing)

  • 3 loaves stale but not dry bread
  • 1 cube margarine
  • 1 tablespoons sage
  • 2 teaspoons salt
  • 2 cups finely chopped celery
  • 1 1/2 cups finely chopped onions

Remove crusts from bread(I use the crusts).  Crumble bread(or use blender or food processer).  Work in room temperature margarine with hands like pie dough.  Add spices, onions and celery.  This is enough dressing for about a 12 to 14 pound turkey.

Butter Mints

(Makes 1 1/2 pounds candy)

  • 3 cups sugar
  • 1/4 pound butter (cut in pieces)
  • 1/4 teaspoon salt
  • 1 cup warm water
  • 5 drops coloring
  • 17 drops peppermint oil

Stir sugar, salt, butter, and water for 2 minutes before putting on heat. Put on medium high.  Stir till butter melts, put in thermometer.  Cook without stirring to 248 degrees.  Pour on buttered, chilled marble slab (butter slab before chilling). Add flavoring and coloring.  Begin working immediately.  Pull till looses gloss and can’t pull any more.  Stretch in rope, cut in pieces immediately.  Let cool, not touching each other for about 5-10 minutes.  Store in air tight can in layers with waxed paper between layers.  Don’t let pieces touch.

English Toffee

  • 1 pound real butter
  • 2 cups sugar
  • Two 1/2 cups chopped nuts (not 2 and 1/2)
  • 1 tablespoon vinegar
  • 1 – 7 ounce Hershey Bar (giant size)

Melt butter.   Add 1/2 cup nuts, sugar, and vinegar.   Cook to hard ball or crack (260oF.) over medium heat, stirring until light brown.  Pour mixture into large cookie sheet.   Melt Hershey bar and spread over toffee.
Sprinkle with remaining 1/2 cup nuts.  Chill and break into bite size pieces.

Spanish Rice

  • 1 cup cooked rice
  • 1/2 cup chopped green pepper
  • 1 pound ground beef
  • 1 medium onion,chopped
  • salt and pepper to taste
  • 1 15 ounce can tomato sauce
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon chili powder

Brown ground beef with onion and green pepper.  Add spices, tomato sauce and rice.  Cook until thickened.  Serve with shredded cheese.
