• 1/2 cup canned milk
• 1/2 cup water
• 1 tablespoon vinegar
Or:
• 1/2 cup milk
• 1 tablespoon vinegar
Let sit to set up.

Sour Milk:
EGGS
1 EGG
• 1 teaspoon Knox Gelatin
• 3 tablespoons Cold Water
• 2 T. & 1 teas.Boiling Water
2 EGGS
• 2 teaspoons Knox Gelatin
• 1/3 cup Cold Water
• 1/3 cup Boiling Water
3 EGGS
• 1 tablespoon Knox Gelatin
• 1/2 cup Cold Water
• 1/2 cup Boiling Water
Place cold water in bowl. Sprinkle over water, mix. Add boiling water. Stir until dissolved. Place in freezer while you prepare cake or cookies. When it is time to add the eggs, take from freezer (it is now thickened). Beat until frothy (This is very important). Add to recipe in place of eggs.
Sweetened Condensed Milk
(*Note: 1 can is equal to 1 1/3 cups):
First Choice:
• 2 cups powdered milk
• 1/2 cup cold water
• 1 cup sugar
Put sugar and water in mixer. Add milk slowly, a little at a time. Beat well. Makes about 2 cups.
Second Choice:
• 1 can evaporated milk
• 1/3 cup sugar
Mix well. Add to any recipe in place of sweetened condensed milk.
Third Choice:
• 4 cups dry milk
• 2 cups sugar
• 2 cups water
• 1 cup butter
Boil water and butter. Mix all ingredients in blender. Store in refrigerator. Makes 5 cups.
